Recipe: Summer In A Jar

When we got back from Wilderness Festival earlier this week, it's safe to say that we were craving some nourishment in the food department. Four days of cider drinking, camp site fry ups and 'pop up' food in paper plates (albeit delicious) had us hungry for something home cooked.

So while we made our way through the endless washing Sam whipped up a Summer garden dish which ticked all the post festival boxes. A tomato sauce which was SO easy and which we poured over quick cook spaghetti, after four long hot showers to wash away the weekend's revelry.

I thought I'd share it here in case you fancy bottling up a bit of Summer flavour too. We made this last year and froze a few batches which we thanked ourselves for in the cold Winter months. So here's how:


Ingredients:

3 Cloves of garlic

1/2 Caugette

1 Carrot

1 Onion

Fresh tomatoes - few handfuls

Garden herbs - we used oregano, basil and thyme

Roughly shop the onion, garlic, caugette and carrot and fry over a medium heat until they soften, add in chilli if you want to spice thing up. Throw in the tomatoes (halved) and reduce heat, allowing the mixture to simmer gently for about 30 minutes. The caugette and carrots will soften during this time in the tomato juice. While it's simmering, finely chop your herbs and stir in. Throw it all in a food processor and blitz. Enjoy simply poured over pasta or use as a stunning fresh base for a bolegnaise or lasagne.


Recipe purists may have issues with the 'all in one' method here but this dish was prepared with a 'low fuss, high speed' agenda so throwing it all in one pan was the way forward! The flavours are SO fresh and unlike any shop bought jar of tomato sauce you'll find.
